Leek Salad with Lemon Vinaigrette

  • 2 leeks, white and light green parts only, thinly sliced
  • 1/2 cup of chopped walnuts
  • 1/4 cup of crumbled feta cheese
  • 1/4 cup of lemon juice
  • 1/4 cup of olive oil
  • 1 tablespoon of Dijon mustard
  • Salt and pepper to taste


  1. Wash the leeks thoroughly and trim the ends.
  2. Slice the leeks thinly.
